The Hartman Group has a great article on the growing trend of street food in urban environments.
Street food is provided by vendors using a variety of delivery methods - everything from carts to buses.
According to Hartman the trend is here to stay, with the vendors sharing 3 common attributes:
1. They harness the power of local. Interesting quote on this from the owner of a street food vendor:
"My priorities are local, then organic, and always delicious ..."
2. They listen to their customers. A good idea for any business, Hartman uses the example of Skillet (see their Airstream mobile restaurant on the right), who got the idea for their popular "bacon jam" from a customer.
Bacon jam sounds disgusting to me. But according to Hartman it is "often described as "magical" by die-hard fans."
3. They are fluent in social media. Some of the best examples of Twitter usage comes from this industry and several good uses of social media are presented in the article.
For another example of street food, see NPR's article on The Cupcake Truck.
Street food is a fun trend illustrating the broader new localism and small farm movements.
